Hello! I owned a commercial specialty cake & macaron shoppe for 15 years. I retired my storefront but continue to bake in my home kitchen. It is pet & smoke free & complies with my state’s cottage food law. I bake & sell macaron shells only. They are not filled. You can fill them with whatever tasty filling you’re dreaming of. My shells are baked fresh for live auctions & ship from Montana. We have 4 different seasons & random bouts of rain & snow all year. I use certain recipe methods depending on humidity levels. As a result, some ruffles (feet) might be more or less ruffled. Some shells may be 80% to 100% full (but never completely hollow).Just fill the shells, refrigerate for a couple of days. They will “mature” and expand inside.
