Ingredients (4 burgers):
- 1 lb 80/20 ground beef
- 1 tsp kosher salt
- 1 tsp black pepper
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 tbsp Worcestershire sauce
- 4 slices American or cheddar cheese
- 4 brioche buns
- Lettuce, tomato, onion, pickles
- Mayo + ketchup + mustard
🔥 Directions:
1. Mix beef, Worcestershire, garlic powder, onion powder, pepper, and salt gently. Don’t overwork it.
2. Form 4 patties slightly wider than your buns. Press a small dent into the center.
3. Heat a cast-iron skillet or griddle until very hot. Add patties—no oil needed.
4. Cook 3–4 min, flip, then cook another 2–3 min.
5. Add cheese during the last minute and cover to melt.
6. Toast the buns cut-side down for 30–60 seconds.
7. Sauce the buns, add burger and toppings.
🔥 SECRET: Smash the edges firmly when the patty hits the pan for crispy, caramelized edges—but don’t smash it after flipping.

1. Marinate: Mix buttermilk, hot sauce, 1 tsp salt, and ½ tsp pepper. Add chicken, cover, and refrigerate 4–24 hours.
2. Make the coating: Mix flour, cornstarch, remaining seasonings, and baking powder. Drizzle 2 tbsp of the buttermilk marinade into the flour and rub it in—those little clumps create the BEST crunchy bits.
3. Fry: Heat 2–3 inches of oil to 350°F. Remove chicken from marinade, coat heavily in flour, pressing it on firmly.
Fry in batches at 325–350°F, turning occasionally, until deep golden and the thickest part reaches 165°F—about 12–18 minutes depending on size.
